Program Introduction

Description

The Coffee Science Certificate^® (CSC) is the industry’s first and only training program aimed at providing a greater technical understanding of overall coffee science. The program which extends across a wide range of disciplines is focused primarily on the science and chemistry of coffee from ‘bean to cup’.

The CSC program is composed of three levels of certification (CSC-1, CSC-2, CSC-3). Candidates who have successfully completed all three levels of certification become an official Certified Coffee Scientist™.

Goals & Objectives

Participants completing the CSC program will gain a:

Comprehensive understanding of taste chemistry and its role in coffee quality.
Understanding of technical issues related to cultivation, production and post-harvest processing.
Understanding of coffee’s chemical composition and factors related to quality.
Understanding of coffee’s chemical transformation across all stages of production.
Understanding of quality dynamics, preparation and preservation across the entire supply chain.

Recommended Audience

The CSC program is intended to serve a wide range of coffee professionals including producers, roasters, importers/exporters, baristas, café owners as well as consumers.
Even if you've been in the industry for a while, we are confident that this seminar will greatly increase your technical knowledge of coffee.
In the past we've had roasters, baristas, product developers, technicians, engineers, quality control, marketing/sales and even consumers take the course with rave reviews.
This course is open to beginners with at least a basic understanding of coffee processing as well as coffee professionals with 10+ years experience.

Requirements

Students interested in enrolling in the CSC program are required to have:

at least 1 year experience in coffee and have a thorough understanding of basic coffee processing from bean to cup.
although not required, a technical background is beneficial.

Overall the Coffee Science Certificate (CSC) program is designed for coffee professionals whom don't necessarily have a 4 year in chemistry/science.

The program is designed to assist professionals in 'connecting the dots' between theoretical coffee knowledge, general chemistry and food science fundamentals for real-world applications.

After completing the course the knowledge gained will assist professionals in quality improvement, research & development (R&D), and serve as the basis for coffee/beverage innovation.

Is aimed at building a strong technical foundation of coffee, exploring introductory coffee science, taste chemistry, and issues related to coffee as a raw product.

Joseph A. Rivera
Director of Research & Development

After receiving his degree in Food Chemistry from California State University, Joseph A. Rivera served as a Research & Development Scientist for the Coffee Quality Institute (CQI) a non-profit educational research foundation. During his role at CQI he served as the organization's lead scientist to bridge science, chemistry and technology with practical coffee science.

As such his work has allowed him to play a key role in the development of numerous internationally recognized certification programs including the: Q-Certification, WBC Certification, SCAA Certification, Roaster Guild Certification, SCAA Brewer Certification, SCAA/CQI Lab Certification as well as several others still in use today.

In 2000, Joseph accepted the position of Director of Science and Technology for the Specialty Coffee Association of America (SCAA) where he served as the industry's lead coffee scientist, lead instructor, and Subject Matter Expert (SME) for the SCAA's Professional Development & Education Committee.

Over the years he has been a frequent technical contributor to several trade publications, international conferences and has appeared on National Public Radio (NPR), Australian Broadcasting Corporation (ABC) and the History Channel’s: Coffee documentary. He's been a frequent presenter at the SCAA's Annual Conference and has presented at numerous events including the Tea & Coffee World Cup, Nordic Barista Cup, National Coffee Assn, Russian Coffee Expo and SCAE 1st World Coffee Roasters Summit.

In 2004, he launched www.coffeechemistry.com - the largest scientific information portal on specialty coffee - which has gained global recognition over the years.

In 2009, after a decade in the specialty coffee industry, Joseph left SCAA to launch an independent consulting firm dedicated to technical training, consulting, testing and addressing the future needs of the industry.

In 2013, he developed the first and only, Coffee Science Certificate (CSC) program with over almost three hundred students currently certified globally.
